Rustic Tomato Basil soup, 1/2 mozzarella tomato pesto sandwich- my Italian lunch in San Diego!

This incredible italian style lunch began with and INCREDIBLE tomato pesto I found at the farmers market last weekend.

A precious little old Italian man had his own booth set up, and I spent a good 20 mins talking to him about all the natural ingredients in his various flavors of pestos.

After trying 2 (more like 7) differeny flavors on his sample french bread slices, I fell passionately in love with his fresh tomato basil pesto. I couldn’t wait to get home to slap some of it on a sandwich!

Thus, the creation of this Italian style San Diego lunch 🙂

Adding veggies to smoothies- carrot peach apple banana!

I am completely shocked yet again. Today I put carrots in my morning fruit smoothie, and just like yesterday with the tomatoes, I couldn’t even taste them!
Who knew eating veggies every day would be so easy. If I had known, I would have started putting veggies in my smoothies a long time ago. I’m going to challenge myself to put a new vegetable in my smoothie every day.

I’m going to go in search for a Farmers market in San Diego today, and pick out a vegetable for tomorrow morning’s new smoothie experiment.

All natural honey-mint tea

One of my best friends gave me this deliciously simple tea recipe the last time I drove up to see her in San Bernadino.

I’m NOT a big fan of tea, however I had a tickle in my throat that weekend- so she gave me this tea. She made it with leave from her freshly grown mint plant. I surprisingly enjoyed this delicate combination and had to blog about my first positive tea experience.

Tea-sperience (I’m officially making this a word.)

Unfortunately, I failed miserably at growing my own mint plant at home (my thumbs are obviously not green… they’re hot pink.) Thank our beautiful Lord that Trader Joes is just a few minutes away, and carries pre-packaged mint leaves.

Ingredients:
4-6 Mint leaves
1 cup of water
1-2 tsp of honey
1 cute cup
A warm blanket and your favorite movie!

Recipe:
Heat water, combine ingredients, wait 2 minutes for flavors to dissolve, then drink and relax!

Honey tip:
This honey-mint tea tastes the absolute best with real honey. However, I am currently out of all natural/organic honey; which I purchased from the farmers market last month (yay support your local farmers.) Until  next week’s farmers market, this artificial bear stuff will have to suffice. I recommend going out of your way to your local farmers market and getting your own real honey as well.

Since I’m SO excited to finally be out of school for summer, I decided that this is the PERFECT time to start working on improving my minimal cooking skills. Join me!

It’s time for us to move on from the dark side of processed Mac and Cheese, and over to the brighter and better side of real unprocessed meals. Bye-bye burnt toast, HELLO farmers markets and fresh cooked veggies! Unfortunately, since Martha Stewart isn’t our next-door neighbor, we all have to teach ourselves howto make something in the kitchen besides a mess and several small fires. Challenge yourself with me; kiss the days of frozen dinners goodbye, and become new BFFS with your oven.

 Make a plan Just two new recipes a week

Like all new goals, you need to create a plan on how you’re going to get yourself to achieve it. Since there are about two and a half months left of summer, I decided to create a challenge that will have my followers and I attempting two new foods EVERY WEEK. By the end of summer, we’ll all have made more than 20 new recipes that we didn’t know how to make before!

 Your recipe book get creative

As you can see, I’ve decorated my own cute little recipe book. This little notebook cost me $.50, and here I’ll be adding all my favorite recipes from this summer. When I start school up again for the fall, I’ll have all my own fabulous favorite collection of recipes in one place to choose from. Make one; add your own stickers, colors, glitter, and personality to it. You’ll get really excited to write in this twice a week, trust me.

**As you can see, I also put my grocery list on the inside cover of the recipe book IN PENCIL. That way, I can add and remove items that I need (and don’t need) for that week’s 2 recipes.
