I’m a blonde wrapper! Artichoke and Sun-Dried tomato style :)

Wraps are a fabulous low-cal substitute for sandwiches!

A significant amount of calories are cut because a tortilla is substituted for two slices of bread. If you’re careful with the ingredients, you can cut 1/2 the calories out of a regular lunch.

So fast, so easy, and tastes good cold! This is a great lunch idea to bring with you to college or work 🙂

A Spicy Flatbread Frenzy! Sauteed Sun-Dried Tomato, Red Peppers, Cayenne and Oregano masterpiece.

FB1 FB2 FB3

Lately I’ve gotten myself into a fabulous flatbread frenzy! After tasting my first flatbread a few weeks ago, I just can’t seem to get enough of them. I LOVE letting my healthy creative mind wonder. Coming up with flatbread toppings is almost as fun as eating the flatbread… almost.

I decided to experiment with spices this week. Oregano, black pepper, Cayenne Pepper and garlic powder seemed like a delicious place to start.

Those spices balanced out with grilled Sun-dried tomatoes, Red peppers, Zucchini slices, garlic coves and Mozzarella cheese ended up being the absolute perfect masterpiece.

Make sure your front door is locked. I guarantee you that your neighbors will smell your delicious flatbread from miles away and come running!

Breathtaking flower fruit spinach salad!

This delicious mouthful of healthy Fitspiration will absolutely take your breath away. I brought this baby to a party this weekend and all my friends LOVED it!

It’s easy, healthy and BEAUTIFUL (if I do say so myself… and I do!)

Did I mention it was cheap too? My fridge is almost always filled with fruit (since I make fruit smoothies every morning), so I used all the left-over fruits I had in there, and created this flowerful beauty!

My boyfriend brought in some lovely flowers from my front garden, so I threw those in for some extra color too.

I really love that this is such an impressive looking salad that took such little effort to throw together for a party. Keep it in mind for your next hang out!

P.s Oh my gosh you guys, aren’t my food-ography pictures getting so much better??!? I’ve been practicing with different lightning techniques with my camera and it’s been making SUCH a big difference.

southern

I’m so head-over-heels excited- my best friend Allie and I are throwing a “Southern Style Party”.

What is that you ask? Well, we made it up so we’re kind of throwing ideas together as we go along. Let me tell you, we’re having a blast along the way! A few of our close friends are getting together, and it’s going to be pretty fabulous.

My boyfriend Bryan is a true southern boy from North Carolina, so he’s giving us Cali girls some ideas too 🙂

So far, our southern food list includes:

  • Steaks marinated in Allie’s Grandma’s Whisky Marinade (for the non-vegetarians of course)
  • Scalloped potatoes
  • SWEET TEA in mason jars if I can find some (holla if you watch Duck Dynasty!)
  • Corn Bread (duh, that’s a must)
  • A delicious salad (I don’t think that’s southern… but I have to eat at this thing too… you know me, got to throw some health in there somewhere! There aren’t very many southern vegetarian foods which I learned the hard way when he flew me out to North Carolina to visit his family- they kept wanting to feed me bacon and steak. SO if Bryan touches my salad, I’m making that count as a Southern salad.)
  • Grilled Corn (still in the husks)

Not sure what else we’ll come up with, but let me tell you I’ve got my cowgirl boots and country music ready!

Pictures to come after the party tonight 🙂

Rustic Tomato Basil soup, 1/2 mozzarella tomato pesto sandwich- my Italian lunch in San Diego!

This incredible italian style lunch began with and INCREDIBLE tomato pesto I found at the farmers market last weekend.

A precious little old Italian man had his own booth set up, and I spent a good 20 mins talking to him about all the natural ingredients in his various flavors of pestos.

After trying 2 (more like 7) differeny flavors on his sample french bread slices, I fell passionately in love with his fresh tomato basil pesto. I couldn’t wait to get home to slap some of it on a sandwich!

Thus, the creation of this Italian style San Diego lunch 🙂

I loved it cold, with a bowl of my delicious tomato-basil soup. (See my tomato basil soup post for the recipe)

Perfect lunch to perk up a gloomy day!

Gorgonzola garlic salad

You haven’t had a true salad until you’ve tasted this one. I know I know I know what you’re thinking; …garlic and pears??? EW!

WRONG! Think again. The savory flavors of the roasted garlic vinaigrette, go astonishingly well with the sweet Anjou pears.

This salad is quick, fresh and a delight side to any main course, or a perfect lunch all on its own 🙂

Ps oh my gosh you guys, these pictures turned out so great!! I’m getting so much better with my food photography!
