This incredible italian style lunch began with and INCREDIBLE tomato pesto I found at the farmers market last weekend.
A precious little old Italian man had his own booth set up, and I spent a good 20 mins talking to him about all the natural ingredients in his various flavors of pestos.
After trying 2 (more like 7) differeny flavors on his sample french bread slices, I fell passionately in love with his fresh tomato basil pesto. I couldn’t wait to get home to slap some of it on a sandwich!
Thus, the creation of this Italian style San Diego lunch 🙂
I loved it cold, with a bowl of my delicious tomato-basil soup. (See my tomato basil soup post for the recipe)
Perfect lunch to perk up a gloomy day!
This salad is perfect for any summer gathering, party or lunch!
The combination of fruit, nuts and dark leafy greens makes this salad not only delicious, but high up on a healthy scale.
It also only took me 5 minutes to put it together. Easy and delicious, my favorite combination 🙂
- Apple Pecan Dressing
- Green Apple Slices
- Sliced Almonds
- Dark Leafy Spring Lettuce
- Spinach Leaves
I found that this salad is better shaken. When you just pour the dressing over the lettuce, it tends to clump up on various ingredients and doesn’t reach to others. Trust me, this incredible dressing is so tasty, you’ll want it to reach every piece!
Make sure not to over-dress your salad. The delicate sweetness of the Apple Pecan dressing is delicious, but it’s easy to over do it. Start small, and add as needed.
It’s another beautiful day in Sunny San Diego and I just spent 2 hours of it with my wittle yorkie Locket!
I must have burnt like 938377383 calories running around with her my back yard.
We both agree the lake is looking extra pretty today.
Locket and I are going to finish off this beautiful day with the second half of this smoothie from this morning, and some all-natural doggie treats 🙂
Besides being low in calories, fruits and vegetables are rich in different types of vitamins, fibre and antioxidants.
Instead of filling yourself with over-processed foods that only makes your body THINK it’s full, fill yourself with low-calorie fruits and vegetables. You can eat WAY more, and they will keep your body full much longer.
Think before you eat!
Put some variety in your morning smoothies!
If you switch up your fruits and veggies every morning, your body will get a great weekly variation of nutrients.

Throughout my many awesome years of health blogging, not to mention my entire 24 years of lifelong vegetarianism; one of the most common questions I get asked is, “Brittany, why would you possibly bother being vegetarian?”
Here are my 3 answers to that question-
Did you know we raise 10 BILLION animals each year for meat? Out of those 10 billion- a majority of them are raised in factory farm conditions that we wouldn’t even consider for our own cats, dogs etc. If you’d like to learn more about this- Google these 3 words: “animal factory cruelty”. Spend ONE minute on Google images, and I guarantee you’ll give vegetarianism another thought.
Meat causes more emissions than all transportation combined. Cars, trains, planes, boats- you name it.
Beef production uses 100 times more water then most vegetables do.
Increase in Meat Consumption
We as a society are eating TWICE as much meat as we did in the 50’s. What used to be a small side dish, is now the main course.
With the traditional Western diet, the average American consumes about double the protein her or his body needs.
Additionally, the main source of protein comes from animal products which are high in fat and saturated fat.
Stand against animal cruelty, help the environment, allow your body to be healthier, and live a longer life; being vegetarian is AWESOME.
