Palm Springs Outfit- CHECK!

I’m so excited to go on a mini vacation tomorrow with my 2 best friends! We’re going to Palm Springs and it’s supposed to be 108 degrees (yikes!)

At least I’ve got a cool outfit to wear in the hot weather! This is my first long dress, so I’m really excited to wear it.

Getting out of your city is a great way to feel refreshed and get out of your daily routine.

I found the cutest salad tossers in the universe!

I’m at my best friend Allie’s house, and she’s making me Ceazer salad as I write this post (I’m a lucky BFF.)
I discovered these two precious gems in her kitchen, and I’M SO OBSESSED WITH THEM!
Unfortunately, my satchel is too small to sneak them home with me; so I’ll have to keep them at her house.
Clever salad tossers are becoming my favorite new obsession. I’ll post my cute pink bunny ear shaped tossers when I get home 🙂

Creamy easy make Tomato Basil soup!

I’ve officially dived into the wonderful world if soups! Growing up a picky eater, I wouldn’t go anywhere near foods that didn’t have the words “mac” or “cheese” in it. Now, I’m 24 years old I’m slowing taking baby steps out of the picky eating world! After a drop of tomato soup touched my tongue, I couldn’t get enough. Try this delicious (very easy) recipe and fall in love too!

Ingredients:

1 lb tomatoes
1 bunch of fresh basil, chopped
1 cups vegetable broth
1-2 cloves garlic
1/2 cup whole milk
1 tsp olive oil
1 tbsp balsamic vinegar
salt and pepper to taste

Easy Preparation:

Put all of your fresh and delicious ingredients together in a blender or food processor. When they’re blended, put your smooth soup into a medium-sized saucepan for 7-10 minutes. Place all ingredients in a food processor or blender and process until almost smooth, or until desired consistency is reached. The milk is not necessary, however I love my tomato soup creamy 🙂

Makes 2-4 servings.

Flakey low-fat avocado biscuits with Sauted Mushrooms

I threw together this delicious mini-masterpiece from fridge left-overs!

What’s in it:
Melted string mozzarella cheese
Low-Fat baked flakey biscuits
Sauted honey portable mushrooms
Freshly sliced avocado
A simple Italian side salad

After baking the biscuits in the oven for 5 minutes, I took them out, filled them with the ingredients above, covered them in tin foil, and then baked them again for 5 minutes  this got the cheese melted to perfection without burning the biscuits.

If you’re having a hard time getting yourself motivated to workout during summer, remember your goals. WHY do you want to workout? Imagine how you’ll feel tomorrow when you look back at today. I bet you’ll say “Why didn’t I just get up and do it?” You’re always going to regret the things you don’t do.

Choose a healthy dessert

I chose to snack on some homemade blue raspberry jello tonight with my dad, instead of a bowl of icecream or a bunch of cookies!

Less sugar, less calories and just as satisfying.

I added fresh blueberries and raspberries while preparing the jello mixture this morning, unfortunately I got hungry and ate them before I took this picture. They were a fresh and fruity Fitspirational spin to this classic dessert.

Pear White Balsamic-Vinegarette

This delicious Pear White Balsamic Vinegarette was recommended to me by my friend Melissa! She made a kick-butt summer pear salad for our church potluck.

My mouth is still watering just thinking about it! It was so delicious, that everyone ate it before I could get my phone out to snap a picture!

Anyway, Melissa found this fruity-gem at Sprouts (which is a local San Diego food store.)
I definitely recommend picking some up!
