Mini grocery stop- TIP: purchase produce in smaller portions!

Lately I’ve been noticing that I don’t seem to be eating all of the fruit and veggies that I purchase before they go bad.

So, to switch things up (and save a bit of money since I’m on a college girl budget) last week I didn’t buy as much produce as I usually would.

My plan totally worked, I actually ran out of fruit and veggies early- and not even a single strawberry went to waste!

The downside however, is I had to make another mini-trip to the store today to stock up on what I ran out of.

I secretly love grocery shopping so I didn’t mind 🙂

Wraps are a fabulous low-cal substitute for sandwiches!

A significant amount of calories are cut because a tortilla is substituted for two slices of bread. If you’re careful with the ingredients, you can cut 1/2 the calories out of a regular lunch.

So fast, so easy, and tastes good cold! This is a great lunch idea to bring with you to college or work 🙂

Raspberry Waffle Protein Mini-Breakfast

In a mad dash out the door this morning on the way to my hair appointment, I threw together this delicious waffle raspberry combo! I was so thankful that I made extra protein waffles last week and froze them!

Having some extra pre-prepared meals on hand definitely comes in handy with a busy schedule. If it wasn’t for my excess of protein waffles, I would have only had a fruit smoothie for breakfast.

My metabolism is too high to survive off of a fruit smoothie for more then a couple hours, so this protein waffle was really a life saver!

One of the reasons I LOVE these crepes, is because they’re PACKED with protein and only have 3 ingredients. I love knowing exactly what I’m putting into my body, so making my own breakfast is always a joy. No artificial sweeteners or preservatives in here, that’s for sure 🙂

Grilled Zucchini and Summer Squash Stacks with melted mozzarella cheese!

What can I say, I’ve created the PERFECT appetizer!

This slightly spicy, low-cal dish is great for parties, lunches or just a quick snack on a summer day. I had a bunch of squashes and zucchini left over from our “southern party” last weekend, so I threw them together and created Grilled Zucchini and Summer Squash Stacks!

To put a fun little spin on it, I sauteed the veggies in Balsamic Vinaigrette instead of oil and it came out GREAT.

Breathtaking flower fruit spinach salad!

This delicious mouthful of healthy Fitspiration will absolutely take your breath away. I brought this baby to a party this weekend and all my friends LOVED it!

It’s easy, healthy and BEAUTIFUL (if I do say so myself… and I do!)

Did I mention it was cheap too? My fridge is almost always filled with fruit (since I make fruit smoothies every morning), so I used all the left-over fruits I had in there, and created this flowerful beauty!

My boyfriend brought in some lovely flowers from my front garden, so I threw those in for some extra color too.

P.s Oh my gosh you guys, aren’t my food-ography pictures getting so much better??!? I’ve been practicing with different lightning techniques with my camera and it’s been making SUCH a big difference.

Classy Cornbread

I’m calling this beauty “classy cornbread” because of the adorable pink flowers I tossed in. My boyfriend Bryan picked them for me, I just couldn’t resist 🙂

Plus, I’m really into food-ography lately so it was perfect!

How To Make a Green Smoothie! Vegetarians, this is especially for you :)

I really need to start making more green smoothies!

I’ve got the morning fruit smoothie routine down to a science, but I’m having a hard time getting some green veggies in there. Definitely going to use this on this morning’s smoothie. Being a life-long vegetarian, I need all the green veggies I can get.

Not to mention, I just got some AWESOME green tea lemonade from a health food store by my house that I can’t WAIT to try. It’ll be a perfect addition to a green smoothie.

I’ll post the recipe that I come up with later today 🙂

Rustic Tomato Basil soup, 1/2 mozzarella tomato pesto sandwich- my Italian lunch in San Diego!

This incredible italian style lunch began with and INCREDIBLE tomato pesto I found at the farmers market last weekend.

A precious little old Italian man had his own booth set up, and I spent a good 20 mins talking to him about all the natural ingredients in his various flavors of pestos.

After trying 2 (more like 7) differeny flavors on his sample french bread slices, I fell passionately in love with his fresh tomato basil pesto. I couldn’t wait to get home to slap some of it on a sandwich!

Thus, the creation of this Italian style San Diego lunch 🙂
